FWD members have been working with product suppliers and market analysts to produce a precise defintion of Foodservice as it applies to wholesale distributors. An agreed definition helps to measure the market and compare sales trends and consumer behaviour from a variety of data analysts and insight providers. We are currently encouraging insight providers to agree to the following definitions:
The industry that is concerned with making, transporting or selling of all food and beverages for purchase and consumption out of home (rather than in-home).
This includes: forecourts, supermarkets and supermarket cafes, as well as retail stores such as department store cafes, along with pubs, full service and fast food restaurants, hotels, travel and leisure, workplace, healthcare, education and other public sector locations.
The industry that is concerned with making, transporting or selling of all food and beverages that are for purchase and consumption out of home, where there are additional services provided in preparation or serving i.e. cooking, heating, warming, plating, pouring, or serving.
The outlets serving them also usually have facilities and space on site for consumption. This therefore excludes forecourts, retail and supermarket sites, and includes pubs, full service and fast food restaurants, hotels, travel and leisure, workplace, healthcare, education and other public sector locations.
These definitions are supported by M&C Allegra, Caterlyst, Horizons and CGA Strategy.
Wholesale Distributors supply and support over 330,000 foodservice businesses - ranging from national restaurant chains to independent cafes in the private sector, and hospitals, schools and prisons in the public sector. The graphic below shows where the customer groups sit, and illustrates the distinction between Foodservice and Out of Home.
