Cake from Lomond launches range of triple-layer cocktail-themed cakes

Cake, the Glasgow-based bakery owned by wholesaler Lomond – The Wholesale Food Co, has launched a range of triple-layer cocktail-themed cakes, which is proving to be a runaway success.

Despite its name, the range is completely alcohol free and made with 100% natural flavourings. All cakes are made by hand using free-range eggs and packaged in 100% recyclable packaging. Inspired by classic cocktail combinations, the range is available in a variety of delicious flavours, including:

Strawberry Bellini – three-layered sponge is filled with jam and strawberry and sparkling wine flavour buttercream, topped with buttercream and dried strawberry sprinkles.

White Russian – vanilla and chocolate marble cake layered with chocolate and cream liqueur flavoured buttercream, topped with layer of delicious flavored buttercream and chocolate shavings.

Blueberry Mojito – delicate sponge dotted with candied blueberries and layered with blueberry compote and blueberry and mojito-flavoured buttercream, topped with blueberries and buttercream.

Gin, Lemon and Lime – lemon curd and lemon and gin flavoured buttercream sandwiched in between zesty lemon sponge, topped with buttercream and lime zest.

The cakes are available frozen, pre-portioned into 14 slices to reduce wastage, and are flying off the shelves. “We knew they’d sell quickly, but we’ve been staggered by their popularity,” admits Lauren. “During our launch week last month, we sold four times more than expected, and it’s showing no sign of slowing down.”

The cocktail range can be found at a variety of outlets, such as garden centres, coffee shops, cafes, bars and tourist attractions. “Cocktails are a real favourite and the fact that they’re alcohol free means they’re a hit with everyone,” said Lauren.
